The following cooking classes are demonstrations where students observe step-by-step preparation and taste prepared dishes.


BASIC PASTRY BAKING - FEE: $85
Discover the secrets of great pastry baking. Explore various types of dough, from tart to sweet bread, and learn the best techniques for working with them. Use these skills to make spectacular desserts to share with your family and friends. Sampling of finished pastries is highly recommended!

MEDITERRANEAN COOKING MADE SIMPLE - FEE: $85
Although Mediterranean food appears exotic and complicated, it is actually a "peasant" cuisine. Fifteen countries surround the beautiful Mediterranean Sea ; and while these countries are completely different, all share a passion for delicious and flavorful foods. Learn how to create some items from scratch, and use prepared items in authentic presentations with the creative use of garnishes, and other ingredients. Discover where to shop for Mediterranean foods, and how to select wines and other complementary beverages. Finally, combine traditional cooking methods with a contemporary style and presentation.

THAT'S ITALIAN (COOKING) - FEE: $85
Despite the wide availability of convenience foods, most Italians still prefer to prepare meals using cherished recipes. From northern Tuscany to the Calabrian region, recipes, tastes, and traditions vary. Most authentic Italian meals consist of a variety of side dishes served in small portions, including soups, pasta in broth, a serving of meat or fish, vegetable or salad, followed by desserts, fruits, cheeses, and espresso. Discover how to create regional Italian dinners, from appetizers to desserts, that are simple to make, but look like you worked all day. Wine and beverage choices will be discussed.

Shallots is a unique, upscale French-American kosher restaurant. Classically-trained, award-winning Executive Chef Laura Frankel serves fresh organic produce, wild fish, and all homemade products from bread to sorbets. GREEN MARKET SURPRISE - FEE: $59 individual class
We'll get an early start so Chef Laura can take us on a tour of the famous Skokie Farmers' Market, a bustling marketplace voted "Best on the North Shore." Under her guidance we will choose the best and freshest ingredient at the market that day, from heirloom tomatoes to gourmet mushrooms. Then it's back to the Shallots kitchen, where she will show us three extraordinary ways to work with our surprise ingredients.

A "SLOW FOOD" DINNER - FEE: $59 individual class
The International Slow Food Movement, founded in Italy, is dedicated to preserving and promoting artisanal and traditional foods. It is the antidote to fast food and on-the-run eating-focusing on taste, tradition, and the honest pleasure of eating well. Slow Food also is about taking the time to slow down and enjoy life with family and friends. Chef Laura will give a brief introduction to the Slow Food philosophy and techniques, then we'll get down to cooking a superb and truly gratifying dinner.

The world of fine chocolate is as varied and complex as the world of fine wine. So, how do you recognize a truly exceptional chocolate? Pâte à choux is a versatile dough that can be used to make elegant hors d'oeurves, profiteroles, éclairs, churros, and pretty swans. Many home cooks shy away from pâte à choux due to its seeming difficulty, but Chef Mark will show you how straightforward this delectable pastry really is. Piping techniques also will be covered.

David's Bistro

David's Bistro is a French-American restaurant where traditional bistro fare meets contemporary cuisine. Traditional bistro favorites include baked escargot and steak pommes frites. Contemporary fare includes pecan and pine nut encrusted tilapia, and venison chop in ancho chili sauce. Chef David Maish has been featured on numerous television shows and just might be TV's next celebrity chef. His entertaining cooking demonstrations are a great chance to laugh and have fun while learning techniques you can use at home. Full dinner, wine, and recipes are included.

A Cook's Tour: Chicago 's Ethinc Grocery Stores
What's the next best thing to visiting markets in foreign countries? A walking tour of Chicago 's ethnic grocery stores, of course. Take this opportunity to stock up on hard-to-find ingredients, learn about the cooking methods and legends behind special dishes, and buy unusual gifts. You'll enjoy tasty samples - and burn a few calories as you walk from store to store. The instructor, Evelyn Thompson, received the Chicago Tribune 2003 Good Eating Award for her "unique contribution to Chicago 's food culture." Sewing

The following classes are held at Eric Stiles' new studio in the Colonial Court Mall, 1131 Milwaukee Ave., Riverwoods (Milwaukee Ave. and Deerfield Parkway).

BASIC SEWING AND TAILORING - FEE: $165
Students at all skill levels are welcome to learn how to sew from the master tailor and designer Eric W. Stiles (www.ewsacademy.org). The instructor was formerly supervisor and head tailor for Giorgio Armani and Polo-Ralph Lauren. Learn the special techniques that top European and domestic designers use in clothing construction, fitting, and pressing. The correct method for ripping apart seams also will be demonstrated and taught. Stop making those "homemade-looking" clothes and learn how to make them like the professionals. Students are recommended to take this course with Fashion Design (HEC S92) to enhance and maximize new skills. No sewing experience is required. All semesters are continuing, giving you the option to further develop and enhance your skills. Please bring a three-subject spiral notebook and a few pencils to the first class session.
